Make Ahead Chicken Casserole

This cheesy chicken casserole is a family favorite. It's so easy to throw everything together the night before, and simply take and bake when you're ready for a meal. This hearty casserole will feed a crowd and leave you with plenty of leftovers.

Serves: 4

  • 8 ounces macaroni, uncooked
  • 1/2 pound Velveeta cheese, cubed
  • 4 eggs, hard-boiled, chopped
  • 1 can cream of mushroom soup
  • 2 cups chicken, cooked and chopped
  • 1 can cream of chicken soup
  • 2 cups milk
  1. Mix together macaroni, Velveeta cheese, hard-boiled eggs, chicken, cream of mushroom soup, cream of chicken soup, and milk.
  2. Cover and refrigerate overnight.
  3. Take out 1 hour before cooking. Preheat oven to 350 degrees F.
  4. Bake for 1 hour.

Wouldn't the macaroni need to be cooked ? It says uncooked.

There is a lot of liquid in this recipe, so the macaroni should cook. Thanks for asking!

The recipe says add chicken, cream of chicken soup but there's no chicken mentioned in the recipe.

5 is 2 cups cooked chicken.

Recipe says serves four, but also says casserole feeds a crowd with plenty of leftovers?

Do you bake the casserole covered? Not mentioned in the directions, just in the make ahead part.

Hello elysummers, Well you could always use light velveeta and egg substitute instead of eggs. Also low-fat chicken soup and lean chicken.That might help! :) Thanks for commenting.

You do not need to add any water, just the soup as called for in the recipe.

how I measure the can of soup is questionable. Do I make the soup with the water as most cans direct or do I just add the can of unprepared soup?
