Add in whatever you like and customize this recipe with cabbage just to your liking. Every single plate at the table will be licked clean when the meal is finished... that's how good this easy casserole recipe is, and just one bite is proof!

Why is it called "shipwreck casserole"? This type of dinner casserole is referred to as a "shipwreck" because that is exactly what it looks like. With tons of random (and tasty) ingredients, shipwreck casseroles are a jumble of ingredients, just like a sinking ship.

  • 1 large onion
  • 3 large garlic cloves (crushed) or 1 tbsp minced garlic
  • 1/2 head small cabbage (about 7 cups), thinly sliced
  • 4 large carrots, thinly sliced
  • 1 1/2 cup uncooked rice (I use brown and it works out fine)
  • 2 large green peppers, seeded
  • 2 cans (28 ounces) diced tomatoes, including juice
  • 1/4 cup brown sugar
  • 1/4 cup white vinegar
  • 1 1/2 teaspoon dried thyme leaf
  • 1 1/2 teaspoon salt
  • 1 teaspoon Dijon mustard
  • 1 pound ground beef

Easy-to-make and affordable dinners are the best!

I loved the name of this recipe and so I had to come check it out! This looks like a great way to clean the fridge of leftovers. From the picture, it looks like maybe some cheese on the top? I didn't see that listed in ingredients but I'm thinking a sprinkle of cheese would be nice. Has anyone tried this recipe with ground turkey instead of the beef?

The name of this recipe caught my eye, and it sounds delicious! I'm really trying to reduce the amount of food that I waste, especially fresh fruits and vegetables, so I love a recipe that you can add any veggies from your fridge into! This would make great winter's night and would be great to bring to a potluck! I bet the leftovers are just delicious too - will definitely be trying this one out!

This recipe sounds great. How many can I serve with these measurements? I originally thought 4 but then I see use a casserole that will hold 16 cups and I'm thinking now more like 6 or 8.

I think it depends on what else you serve at the same meal. This casserole is probably about 6 or 8 servings if it is the entire meal, maybe as many as 16 if other items are also offered. The entire recipe may be a good potluck offering. I think, for my husband and myself that half the recipe will be a great plenty if we eat it at home; if we share with others, I'd probably cook the full recipe.
