Easy All-in-One Taco Hot Dish

Give your taco night a much needed facelift. This Easy All-in-One Taco Hot Dish combines everything you love about tacos into one dish. Spicy beef is this dish's star and gives the whole meal a great heat. Melted cheese adds a wonderful creaminess and mellows the spiciness out a tad. With crunchy nachos layering the bottom of this one-dish wonder and cool lettuce sprinkled on top, there is a great array of textures and flavors. You will have a hard time going back to your regularly scheduled taco night after trying this easy Mexican casserole.

Ingredients

  • 1 (8-ounce) bag taco chips, crushed
  • 1 pound hamburger
  • 1 medium onion, chopped
  • 1 can tomato soup
  • 1 package taco seasoning
  • 8 ounces cottage cheese
  • 3/4 pound cheddar cheese, grated
  • 1 lettuce, shredded
  • 1 tomato, chopped

Instructions

  1. Preheat oven to 350 degrees F.
     
  2. Crush taco chips and place in lightly-oiled 9x13-inch pan.
     
  3. Brown hamburger and onion, drain. Add tomato soup and taco seasoning. Mix and pour over chips.
     
  4. Spread cottage cheese over meat mixture. Add cheddar cheese. Cover with foil. Bake 40 minutes.
     
  5. Serve with shredded lettuce and chopped tomatoes.

This recipe changes things up a bit when it comes to serving casseroles. Most feature pasta or are Italian-style, but this one offers spicy Mexican flavors, the taste of tacos in every bite without taco shells. For this recipe, I would use lean ground beef and healthy request tomato soup. Instead of using taco seasoning mix, I would add comino, chili powder, and garlic powder to the ground beef. I would also use low fat cottage cheese and reduced fat cheddar cheese. Besides the chopped tomatoes and shredded lettuce, additional toppings for the casserole could include lite sour cream, guacamole, and sliced olives.

Can this be made without the cottage cheese? Really don't like the taste of it.

I guess you could, but my hubby doesn't like cottage cheese, either, but he eats it in dishes like this...
