Dairyland Country Casserole

Ingredients

  • 8 ounces butter noodles
  • 1 1/2 pound ground beef
  • 2 cups tomato sauce
  • 1 1/8 teaspoon Worcestershire sauce
  • 1/2 cup onion, diced
  • 2 cloves of garlic, minced
  • 1/2 green pepper, diced
  • 8 ounces cream cheese
  • 1 cup cottage cheese
  • 1/2 cup sour cream
  • 3 tablespoons butter, melted

Instructions

  1. Preheat oven to 350 degrees F.
     
  2. Make noodles as instructed on package. Set aside.
     
  3. Brown beef, drain. Add tomato sauce, Worcestershire sauce, onion, garlic and pepper.  Let simmer for about 10 minutes.
     
  4. Combine cheeses and sour cream.
     
  5. Butter a large casserole dish. Pour in half of the noodles. Add cheese and cream mixture and cover with remaining noodles. Top with beef mixture. Drizzle melted butter over top.
     
  6. Bake for 30 to 45 minutes.

When I think of comfort food, casseroles come to mind. This looks like a quick and easy recipe that the entire family will enjoy. Dishes featuring ground beef and pasta are always a hit in my household. For a healthier version of this recipe, I would use lean ground beef, unsalted tomato sauce, low sodium Worcestershire sauce, lite cream cheese, low fat cottage cheese, and lite sour cream. I would also use only 2 tablespoons of butter. To ensure that the egg noodles have a good consistency in the casserole, they should be drained before they are done. The pasta will continue to cook in the oven.

"sew4me" got me curious so I googled it. One shouldn't have to do that on a recipe site, but things like that, incorrect directions, omitted ingredients, etc., etc. are all too common on this site. It's a shame, too. There are many very good sounding recipes on this site!. Anyway, it seems like Knorr/Lipton has small packages of something called Pasta Sides. Butter Noodles is one of those. It looked like Kroger might also have something similar. As far as casserole size is concerned, I think I'd start with a 3 qt. size depending on the bulk of the noodles and 1 1/2 lbs. meat. If it turns out to be too large, drop back a size if needed. Seems to me that would be better than using too small a dish and having it "run over". :-) Just my $0 .02 worth.

Sounds interesting. But what are "butter noodles"? I've heard of egg noodles and plain noodles, but the only time (besides now) I've heard of butter noodles. it meant noodles with melted butter.

THEY'VE DONE IT AGAIN! Someone needs to discover that "large" is not a size! They need to SPECIFY what SIZE casserole is required. Again, "large" is not a size! Please.
