Ingredients

  • 4 cups potatoes, diced and peeled
  • 1/4 cup flour
  • 4 tablespoons butter
  • 2 garlic cloves, pressed
  • pepper, to taste
  • 2 cups milk
  • 1 cup dry bread crumbs
  • 1 cup mozzarella cheese, grated

Instructions

  1. Boil the diced potatoes in just enough water to cover until they are not quite cooked. Drain.
     
  2. Melt butter in a saucepan. Add garlic and cook gently.
     
  3. Mix in flour and cook to form a roux.
     
  4. Add milk and cook until thickened. Season with pepper.
     
  5. Thoroughly butter a baking dish. Layer sliced potatoes in dish.
     
  6. Pour cream sauce over the potatoes. Refrigerate overnight.
     
  7. When ready to cook, preheat oven to 400 degrees F.
     
  8. Scatter bread crumbs over the top and cover with cheese. Bake for 20 minutes.

Most people like potato dishes so this would probably be popular at a potluck. What makes this potato casserole different is that it is topped with mozzarella cheese, instead of the standard cheddar cheese. For this recipe, I would use skim milk and reduced fat mozzarella cheese. Salt could be added to this dish, if desired. Other cheeses could be used for the topping as well.

I agree with cooking during the week being a challenge and it is a good idea to prepare beforehand. This can be used as a side dish to other meals and can be eaten over at least two days I would think. It might be an idea to add some bacon into this. I think I may use cream as an alternative to the thickened sauce as I have to eat gluten free and can't have the flour.
