Creamy Ground Turkey Taco Casserole
This lightened-up taco casserole recipe tastes too good to be true. Creamy Ground Turkey Taco Casserole uses turkey and fat-free cottage cheese to make it better for you than other recipes for taco casserole, but the flavor is definitely not compromised. A layer of tortilla chips lines the bottom of the casserole, followed by seasoned turkey, onion, pepper and more. It's then finished off with melted cheese. - 1 pound ground turkey, cooked
- 1/2 cup onions, chopped
- 1/2 cup bell peppers, chopped
- 1 clove garlic or more
- 1 packet taco seasoning mix
- 1 (8-ounce) jar taco sauce
- 1 cup fat-free sour cream, at room temperature
- 1 cup fat-free cottage cheese, at room temperature
- 1 cup tortilla chips, crushed
- 1 cup cheddar cheese, grated
Preheat oven to 350 degrees F.
Prepare the bottom of a 2 1/2-quart casserole dish lightly with cooking spray.
In a skillet, cook turkey, onion, peppers, garlic clove, taco seasoning mix, and taco sauce; drain and set aside.
In a medium sized bowl, combine sour cream and cottage cheese; set aside.
Place crushed chips in the bottom of dish. Add meat mixture to cover the chips, then cover the meat with the sour cream mixture. Sprinkle with cheddar cheese.
Bake, uncovered, for 30 to 35 minutes or until cheese melts and casserole is heated through.
