Classic Tamale Pie

This recipe has all the components you would expect in a traditional tamale pie: beef, corn, olives, cheese and of course, a cornmeal crust. This is great weeknight meal and is also impressive at dinner parties.

Cooking MethodCasserole, Slow Cooker

Ingredients

  • 1 pound ground beef
  • 1 cup chopped onion
  • 1 cup chopped green pepper
  • 2 8-ounce cans tomato sauce
  • 1 can whole kernel corn (drained)
  • 1/2 cup pitted ripe olives, chopped
  • 1 clove garlic, minced
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 2 1/2 teaspoons chili powder, or to taste
  • Dash of pepper
  • 1 1/2 cup cheddar cheese, grated
  • 3/4 cup yellow cornmeal
  • 1/2 teaspoon salt
  • 2 cups cold water
  • 1 tablespoon butter

Instructions

  1. Preheat oven to 375 degrees F. Cook meat, onions, and green pepper in a large skillet till meat is lightly browned and the vegetables are tender. Stir in tomato sauce, corn, olives. garlic, 1 teaspoon of salt, chili powder, and pepper. Simmer 20 to 25 minutes or until thick. Add cheese; stir until melted. Turn into greased 9x9x2 baking dish.

  2. Make Cornmeal Topper: Stir cornmeal and 1/2 tsp salt into cold water. Cook and stir till thick. Add butter; mix well. Spoon over hot meat mixture.

  3. Bake about 40 minutes or until the cornmeal mixture is done.
