Classic Baked Goulash

There are a variety of different casserole recipes, but none compare to the simplicity and our tasty Classic Baked Goulash that has been made in households for generations and generations. Easy to make and perfect for a quick weeknight casserole, it's made with ingredients that you most likely have on hand. A budget friendly dish, there's no reason not to make it.

Ingredients

  • 1 1/2 pound ground beef
  • 1 onion, chopped
  • 1 small can tomato paste
  • 1 can tomato soup
  • 1 can (16-ounces) creamed corn
  • 8 ounces thin or medium flat noodles
  • 1 1/2 cup sharp or extra sharp cheddar cheese, or to taste

Instructions

  1. Preheat oven to 350 degrees F.|
     
  2. Cook onion and ground beef, drain. Cook noodles, drain.
     
  3. Mix meat and noodles with tomato paste, soup and corn.
     
  4. Layer in casserole dish with cheese, starting with meat mixture, ending with cheese. Cook 30-45 minutes.

This is a good casserole for a quick weeknight meal that is easy to prepare. However, I would make a few changes to suit my own preferences. I would definitely omit the cream corn. I would use lean ground beef and healthy request tomato soup since it has reduced sodium. I would use egg noodles in this recipe. The pasta should be drained while it is still a bit underdone to ensure that it has a good consistency in the casserole since it will continue to cook in the oven. For the cheese, I would use reduced fat cheddar cheese.
