You and your family are going to crave this Cattle Drive Casserole so much, it's likely to make its way into your regular dinner routine. Layers of ground beef, bell peppers, onions, cheese, Bisquick and more, make up this easy casserole. 

This recipe includes jalapenos, so it's a little spicy, but you can easily leave those out if you aren't a huge fan of a little added heat. For a meal that delivers in flavor and that won't leave you hungry, make a casserole out of a taco! 


  • 2 pounds ground beef, cooked and drained
  • 1 (1.25-ounce) packet taco seasoning
  • 4 ounces sour cream
  • 4 ounces mayonnaise
  • 8 ounces Cheddar cheese, shredded and divided
  • 1/2 onion, diced
  • 2 cups Bisquick
  • 1 cup water
  • 2 tablespoons juice from jarred jalapeno peppers
  • 1 green bell pepper, chopped
  • 1 (4-ounce) can sliced jalapeno peppers
  • 1 (4-ounce) can whole black olives
  • 1 jar salsa (just enough to spread over the very top of the dish)

  1. Preheat oven to 325 degrees F. Brown ground beef and add taco seasoning and water, according to packet instructions; set aside.

  2. In a separate bowl, combine sour cream, mayonnaise, 4 ounces of Cheddar cheese; set aside.

  3. Stir Bisquick, water, and jalapeño juice together to form a soft dough. Add more Bisquick if needed to achieve a dough consistency. Pat dough on the bottom and one-half-inch up the sides of an 9 x 13-inch greased casserole dish.

  4. Saute onions and bell peppers until slightly tender.

  5. On top of biscuit mix, evenly distribute ingredients in the following order: ground beef, bell pepper and onions, sour cream mixture, black olives, jalapeno peppers, salsa, and end with remaining shredded cheese.

  6. Bake for 30 to 40 minutes or until edges of dough are lightly browned.

My family loves this taco style casserole. I like Bisquick recipes because they are easier than from scratch dishes. We load this casserole up with guacamole, lettuce, tomatoes, sour cream and extra cheese. I do omit the green pepper. I serve it with chips and salsa on the side. It's a great weeknight meal!

This recipe is totally indulgent, but I still love it! It's got lots of cheese, which might be my favorite part.

This recipe is really good for the taco lovers in our house. They loved it! I did substitute the jalapenos for green chilies, but that is only because it was a preference for my children. Other than that, I made this just as stated above. Everyone crunched up some tostito chips for the top, and it was a complete meal. It is easy to make, and easy to clean up. This is one of those meals I don't mind making at the end of a busy day.

Can this be converted to a crock pot?

Simple and tasty and filling. It makes a good amount so it is great for a big family. It would also make great leftovers. It heats up well. Sauteing the onions and peppers together saves a little time. I would rather use sliced olives, but that is just my preference.

I tried this recipe, and I was blown away by how easy and delicious it was! I'll definitely be making this again :)
