Best Baked Potato Casserole

You can never have too many casserole recipes. Casseroles make the perfect dish for the family. Loaded with tasty ingredients they always seem to hit the spot. Our Best Baked Potato Casserole takes everything you love about baked potatoes and makes it into a casserole. Super cheesy, the bake is also loaded with bacon and scallions. You're not going to be able to stop at just one bite.

Cooking MethodOven, Casserole

Ingredients

  • 1 (32-ounce) package frozen seasoned potato wedges
  • 8 bacon slices
  • 1 red bell pepper, sliced
  • 1 cup chopped scallions
  • 1 green pepper, sliced
  • 1 can (10.75-ounces) cheddar cheese soup
  • 1/2 cup sour cream

Instructions

  1. Preheat oven to 400 degrees F.
     
  2. Coat a 9- x 13-inch baking dish with cooking spray. Arrange potato wedges in baking dish.
     
  3. Bake 20 minutes, or until potatoes are thawed and beginning to brown. Top with half each of bacon, bell peppers, and scallion.
     
  4. Put cheese soup on top and sprinkle with remaining bacon and peppers.
     
  5. Bake 20 to 30 minutes, or until potatoes are tender and casserole is heated through.
  6. Top with sour cream and shredded cheese.

sounds great BUT do you or don't you cook the bacon first?

This sounds like an excellent casserole, but I need clarification. Is the bacon cooked before you put it into the casserole ... I worry that it might not be thoroughly cooked placing it uncooked in the casserole? Please advise.
