Craving Mexican food, but don't want to go out? Try this Awesome Beef Taco Casserole! This easy ground beef casserole will have you happy you skipped the restaurant wait, while being better than anything you'd find on a drive-thru menu. When you combine the delicious flavors and unique elements of a taco and turn them into a beef casserole, you know you've got a sure-fire winner on your hands. Once your family tries this amazing dinner recipe, it's sure to become a go-to weeknight favorite!

Serves: 6

Cooking Time: 30 min

Ingredients
  • 1 pound lean ground beef
  • 1 medium onion, chopped
  • 2 teaspoons taco seasoning
  • 1 garlic clove, finely minced
  • 1/2 teaspoon salt
  • 1 (15-1/2-ounce) can black or pinto beans
  • 1 (8-ounce) can tomato sauce
  • 2 cups crushed tortilla chips
  • 1 cup shredded Mexican mix or Cheddar cheese
Instructions
  1. Preheat oven to 350 degrees F and spray a 9 x 9-inch baking dish with cooking spray.
     
  2. In a 10-inch skillet over medium high heat, crumble ground beef and cook, stirring to break up clumps. Add onion and continue to cook and stir for about 10 minutes total. Drain off any accumulated fat and return pan to the heat. Add taco seasoning, garlic and salt and cook for 2 more minutes. 
     
  3. Add beans and tomato sauce and continue to cook until mixture boils. Spoon half the meat mixture into the baking dish, then top with the crushed chips. Spoon the remaining meat over the top and sprinkle with the cheese.
     
  4. Bake for 30 minutes until mixture is bubbly and cheese has melted.

Should those beans be drained?

Tacos is one of those things I never get tired of but sometimes it gets a little boring eating them the same way and this is the perfect way to change it up. Salsa instead of tomato sauce is probably the way I'd go for that extra kick...then top it off with some freshly diced tomatoes, shredded lettuce and some chopped avocados. Ohh and black olives and sour cream wouldn't hurt either!

I love easy to assemble dishes like this. I like the idea of using salsa rather than the tomato sauce. I'd also add some corn and diced green pepper to the mix. Using flavored tortilla chips would also kick up the flavors. There's a brand of guacamole flavored chips available around here that might go very well for use in this dish.

We love these comforting casseroles at our house, especially in the cold winter months. I would probably use ground turkey instead of ground beef. I might also add a cup or so of salsa rather than using tomato sauce. I might also add some mild diced green chiles for a bit more flavor too. Since they are mild, they give flavor to the dish rather than heat. You could use Monterey Jack cheese in addition to cheddar or queso fresco. This is one I will add to my recipe rotation!

In the previous comment, it should read - Use 1 to 1 1/2 teaspoons of taco seasoning.

Many casserole recipes are for Italian-style, pasta-based dishes so this is a break from that. All the flavor of tacos without the shells! I like that the beans are incorporated in the casserole so there is no need to serve them as a side dish. If anyone is looking to reduce the amount of sodium in this recipe, here are some helpful suggestions. Use 1 to 1 teaspoons of taco seasoning, rinse and drain the beans before adding them, use no salt added tomato sauce, and top the casserole with low-fat cheese.

Hmm, I wasn't sure about this recipe because I don't think of tomato sauce in a taco casserole. I do like tacos, and the other reviews say it's good, so I'll try it. I'll top my serving with lettuce, tomatoes, olives, and sour cream, just like a taco.

Would be really good with some hot sauce or crushed chilies cooked in!

Reminded me on taco nights from my childhood! The ground beef was so flavorful and the warm beans made it extra filling.

I don't like kidney beans, do I have to use them? Is there something else I could replace them with, i.e. refried beans? Thanks

As with any recipe, I would think you could substitute almost anything, but I am assuming unless you heat the refried beans by themselves and add separately, all they would do would be absorbed into the liquid thickening it. You need to substitute something that would not break down, otherwise. Black beans, pintos, chickpeas, etc...

Use any can beans that you like (navy, pinto, white beans and black) I wouldn't use a re-fried beans

its good but I would use taco seasoning in the place of the chili powder

Making it for dinner tonight but I know it will be awesome. Has everything we love.
