Jerk Chicken

Ingredients

  • 1/2 cup minced green onions
  • 1/4 cup orange juice
  • 1 tbsp minced gingerroot
  • 1 tbsp minced hot pepper
  • 1 tbsp lime or lemon juice
  • 1 tbsp soya sauce
  • 1 clove garlic, minced
  • 1 tsp allspice
  • 1/4 tsp cinnamon
  • pinch ground cloves
  • 2 pounds chicken drumsticks and/or thighs

Instructions

In shallow glass dish, combine onions, orange juice, ginger, hot pepper, lime juice, soya sauce, garlic, allspice, cinnamon and cloves. Add chicken pieces, cover and marinate in fridge, smurgling occasionally for up to 8 hours. Remove chicken from marinade and shake off excess marinade. Barbeque on greased grill at medium setting for 30 minutes or until juices run clear when pierced with a fork. Turn every 10 minutes and drizzle with marinade during last 15 minutes of cooking time. Note: Can also be cooked in oven at 350F.
