Caribbean Green Sofrito


  • 2 tablespoons oilve oil
  • 1 very small onion
  • 1 bunch of scallions finely chopped (1/2 cup)
  • 4 garlic cloves, minced
  • 1 green bell pepper
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh flat leaf parsley
  • 4 culentro leaves, finely chopped (optional)
  • 1/2 teaspoon salt
  • Freshly ground black pepper to taste


Heat olive oil in a saute pan. Add onion, scallions, garlic and bell pepper. Cook over medium heat until soft and translucent. Stir in cilantro, culentro, salt and pepper. Cook another minute or so. Correct seasoning. Makes one cup.
