Upside Down Banapple Cake
There are so many things we love about this Upside Down Banapple Cake recipe, it's hard to know where to begin. First off, the name. This easy cake recipe gets its moniker from the two main fruits featured in the ingredients list - banana and pineapple. Second, this is one of the fastest dessert recipes to make because you can actually bake it in your microwave. We bet you've never heard of, or tasted, an upside down cake quite like this one!

- 1 1/2 cup flour
- 1 cup sugar or 1/2 cup honey
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 2 eggs
- 1/2 cup oil
- 3/4 teaspoon vanilla
- 1 (6-ounce) can crushed pineapple
- 1/2 cup pecans or walnuts
- 1 cup banana, chopped
- 1 (3-ounce) package cream cheese
- 1/2 cup powdered sugar
- 3 tablespoons butter
- 1 teaspoon vanilla
- 1 1/2 tablespoon milk
In a large bowl mix flour, sugar or honey, salt, baking soda and cinnamon.
In a small bowl, beat eggs and oil well with mixer. Pour two mixtures together and stir with a spoon until moist.
Stir in vanilla, pineapple, nuts and bananas.
Spoon into a greased 16 cup microwave ring mold. Microwave on high for 9 to 12 minutes. Rotate cake 1/4 turn every 3 minutes.
Invert cake 5 minutes after done.
In a small bowl place cream cheese and microwave on high 30 seconds. Add powdered sugar, butter, milk and vanilla. Beat until smooth.
- Frost cake with cream cheese mixture.
