Take that box of lemon cake mix to the next level with this Unforgettable Lemon Pudding Cake! It's a delicious and simple cake recipe that uses lemon cake mix with a lemon pudding filling -- yum! 

Assembling this cake is as easy as mixing the batters and pouring them into a pan. Once it's baked, you'll have a light and fluffy lemon cake with a creamy pudding filling. Serve it warm for a treat everyone is sure to love.

Lemon pudding cake is great with a little bit of ice cream on the side or served with some fresh fruit. Plus, our short video will show you just how easy this tasty, citrus-flavored cake is to make.

Ingredients

  • 1 box lemon cake mix
  • 3 eggs
  • 1 1/4 cup water
  • 1/2 cup vegetable oil
  • 2 (3-ounce) boxes instant lemon pudding mix
  • 1 1/4 cup water
  • 2 cups milk
  • powered sugar (optional)

Instructions

  1. Preheat oven to 350 degrees F and oil a 13x9-inch pan.
     

  2. Add cake mix to a large bowl and make a well in the center. Add eggs, water and vegetable oil to the well, and mix until well combined with a handheld mixer. Pour batter into the prepared pan.  

  3. In another bowl, add lemon pudding, water, and milk, and mix until well combined. Drop spoonfuls of the pudding mixture onto the cake batter, making sure to cover evenly. Using a spatula, spread out the lemon pudding.

  4. Bake for 55-60 minutes. Remove from oven and let cool for 5 minutes. Sprinkle with powdered sugar and serve immediately. Refrigerate leftovers.

I am a true fan of all "serve while warm" desserts and this one looks like it may move over a few of my favorites. I do not come across a lemon recipe often and I love lemon. The ingredients are few and the time to make this dreamy dessert is minimal. I think I will like this recipe.

This is very interesting indeed. The recipe reads sort of like a cobbler. With age, I have learned to like lemon and I think I would like to try this real soon.

Such a divine flavor and with a dollop of our home made vanilla ice cream it was absolutely heavenly! It is also quite possibly the easiest dessert I have ever made because it takes mere minutes to prepare. The flavors are so refreshingly lemony which makes it perfect for a hot summers day.

I love lemon as an adult but as a child, I didn't like it all. This cake looks great though. My mom loves the lemon cakes at restaurants like Macaroni Grill and Bertucci's but she can't eat high fructose corn syrup and that is in those desserts. This might be a great substitute if I can find the pudding and cake mix without that ingredient. I think the Bertucci's one also has Mascarpone cheese in it. I will have to try this out.

My sister-in-law's mother - I have no idea what that makes her to me - always brings her lemon pudding when she is invited over to a meal. We always look forward to that lemon pudding. This recipe sounds like that one. I'm so glad I found this. I'm definitely going to make it.

This is an interesting technique. I didn't know you could put instant lemon pudding on to cake batter and bake it. Has anyone tried this recipe? I can't have milk so I would have to substitute a can of lemon pie filling to replace the pudding. I'd be tempted to make the recipe as shown here for family members who can have dairy products though. It looks delicious. I love lemon.
