  • 1 cup brazil nuts
  • 1/2 cup almonds
  • 1/2 cup cashew nuts
  • 1 cup red cherries
  • 1/4 cup green cherries
  • 3 cups canned pineapple, drained
  • 1 cup raisins
  • 3/4 cup flour
  • 1/2 cup brown sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/2 teaspoon baking powder

  1. Measure nuts, fruit and dry ingredients into a large bowl, reserving some for decoration.
  2. Cut up large pieces of pineapple. Mix eggs and vanilla until thoroughly combined, add to other ingredients. Mix together.
  3. Line a microwave loaf pan or metal ring pan. Spray with baking spray.
  4. Press mixture firmly into pan. Decorate top with reserved fruit, say cherries and brazil nuts.
  5. Bake at 250 degrees F for 2 and 1/2 hours to 3 hours until the cake feels firm.
  6. Cover loosely with paper if it is browning too quickly.

I have never heard of a microwave loaf pan, nor do I know anybody who has ever attempted to bake bread in a microwave. Maybe this is a typo. I plan to use the nonstick metal cake pan that I always use, and give this recipe a try. Since it is chock full of fruits and nuts, and relatively low in added sugar, it would be a great thing to serve at breakfast time for the kids. I try to avoid artificial colors, so I might swap out the maraschino cherries for cherry "raisins".

This is like a fruitcake recipe. What separates it from a fruit cake is that there is no aging time. Fruitcake requires it to be drenched in rum or apple juice and letting it age for a couple months or more before serving. This is nicer. You don't have to plan so far ahead.

Red and green cherries? Are these candied fruits? Nuts - roasted and salted or raw? Microwave pan or metal ring pan? Seems like polar opposites there, as one cannot use metal pans in the microwave and I'd sure hesitate to put a microwaveable pan in a "real" oven. It seems like a great fruit cake recipe, but a bit light on specifics for someone who wasn't cooking back in the "olden days." )

Why do you neeed a microwave pan if you are baking it in the oven?

are family calls it " yule cake ". it has candied orange peel, no pineapple.and three eggs it is very good it was my great grandmothers recipe.

The recipe title caught my eye...but does not seem easy to follow...the flour, brn sugar are also reserved for decoration? I don't get it....step 1 says to reserve some of it? Yes, a pic would be nice...will not try this one....

PICTURES!! Pictures, pictures, pictures! We eat with our eyes first. How do I even know I would like it if I don't want to try it? If I don't like the way it looks, I DEFINITELY won't try to make it.

You say 'work of art' cake. Then don't supply a photo?

The instructions seem some what incomplete. It would be difficult for a novice cook to picture this.

The natural joices in the friut will also moisten the cake. Butter or oil isn't really needed in recipes like this one.

Shouldn't there be some butter or oil in this recipe? 2 eggs doesn't seem enough liquid.

Are the cherries and pineapple candied, as in fruit cake fruit? Or are they marachinos and pineapple tidbits in cans?
