Norwegian Sour Cream Cake

Ingredients

  • 1 1/2 cup soft butter
  • 2 cups sugar
  • 3 eggs
  • 1 1/2 cup sour cream
  • 1 1/2 teaspoon vanilla
  • 3 cups flour
  • 2 1/4 teaspoons baking powder
  • 3/4 teaspoon baking soda
  • 3/8 teaspoon salt
  • 1 cup heavy cream
  • 1/3 cup brown sugar
  • 1/2 teaspoon vanilla
  • 1/2 cup chopped. walnuts
  • 1 tbsp. brown sugar
  • walnut halves

Instructions

Cream butter and sugar. Beat in eggs one by one until fluffy. Beat in sour cream and vanilla (1 1/2 tsp.) Add flour, baking powder, soda and salt gradually. Divide batter into 3 round 9" cake pans. Bake at 350 degrees Fahrenheit 45 minutes. Allow layers to cool in pans, then turn out on rack. Whip cream with 1/3 cup brown sugar and 1/2 tsp. vanilla. To assemble, place one layer on platter, spread top to edges with 1/3 whipped cream. Sprinkle with 1/2 chopped walnuts. Repeat. Top with third layer, spread remaining whipped cream atop. Sprinkle with sifted brown sugar and walnut halves.
