We're not sure why, but it always seems like grandma's cake recipes are always the best. Granny's Favorite Lemon Pudding Cake is a delicious homemade cake recipe that doesn't use any mixes. Made with a hint of lemon juice, this moist cake is a seasonal favorite, and by that we mean it is good any time of year. Make this for your family and watch as it becomes an instant classic.

  • 3/4 c sugar
  • 1/4 c all purpose flour
  • dash salt
  • 3 Tbsp. butter melted
  • 1 1/2 finely shredded lemon peel
  • 1/4 c lemon juice
  • 3 beaten egg yolks
  • 1 1/2 cup milk
  • 3 egg whites
  1. Preheat oven to 350 degrees F.
  2. In a large mixing bowl combine sugar, flour,and salt. Stir in melted butter, lemon peel, and lemon juice.
  3. In a small bowl combine egg yolks and milk; add to flour mixture.
  4. In a mixer bowl beat egg whites to stiff peaks. Gently fold into lemon batter.
  5. Turn into an ungreased 8x8x2 baking pan. Place in a larger pan on oven rack.
  6. Pour hot water into larger pan to a depth of 1-inch.
  7. Bake in oven for 35-40 minutes until top is golden and springs back when touched. serve warm or chilled in individual dessert dishes. Makes 6-8 servings.

I agree with HAPPY LADY. For the shredded lemon peel is it 1 1/2 tsps or tbsps. I also, can't wait to try this recipe. My family loves lemon and this is perfect.

how much shredded lemon peel? all it says is 1 1/2. Looks delicious. Can't wait to try the recipe.
