Easy is an understatement. This Boston Cream Poke Cake could not be simpler to make! If you have a box of cake mix and an oven, you're half way there. All you need to do is bake your boxed cake per the instructions on the back of the box, poke holes in it, and let it cool while you prepare the other two ingredients - vanilla pudding and chocolate ganache. Once those are done, you pour them one at a time over the cake. For a gooey cake, you can serve immediately, and for a cake with toppings that are a little more set, we recommend refrigerating your cake for a few hours. If you do the latter, it will be much easier to serve, but hey, some of us just can't wait for that first bite! The choice is yours.

Ingredients

  • For the Cake
  • 1 box white cake mix (plus, box ingredients)
  • Pudding
  • 2 (3.4-ounce) boxes instant vanilla pudding
  • 4 cups milk
  • Chocolate Ganache
  • 1/4 cup heavy cream plus 2 tablespoons
  • 3 tablespoons butter
  • 4 ounces semi-sweet chocolate
  • 1 teaspoon vanilla
  • 1 cup powdered sugar

Instructions

  1. Mix the cake mix according to the directions on the package. Bake according to the package in a 9x13-inch baking pan.

  2. When cake is done after testing it with a toothpick that comes out clean, remove it from the oven.

  3. Poke holes in it about an inch apart using the back of a wooden spoon.

  4. Mix two boxes vanilla instant pudding with 4 cups milk until smooth. Pour over the cake.

  5. Refrigerate for 2 to 3 hours until pudding is set.

Prepare the Ganache

  1. Heat the butter and heavy cream in the microwave for 1 to 2 minutes. Do not let it boil. Remove from the microwave and add the chocolate. Allow the chocolate to stand for a couple of minutes then whisk it until smooth.

  2. Whisk in the powdered sugar and vanilla until smooth. Pour over the cake and pudding that has been refrigerated.

  3. Refrigerate until chocolate ganache is set a couple of hours.

Where we live, it is really hard to locate a Boston cream pie. It happens to be a favorite of my husband. He discovered it while serving in the Navy and when we do travel north he partakes of it if possible. I don't know if this will be a good substitute or not, but it is worth a try. The directions do not appear to be labor intensive as some Boston cream pies recipes I have seen.

Did the chef add sprinkles prior to serving? I have had the opportunity to have a slice of Boston Cream Pie and I thought it was tasty. To make the pie into a cake with this recipe will make this recipe get done faster.

It may very well be excellent, but it looks disgusting! LOL

Omg, I can't believe how easy this recipe is! I have enjoyed and loved Boston cream pie/cake since the first day I had the pleasure of trying it. It's the perfect balance of sweet and not so sweet to make me want to have it every day...but never thought I'd be able to make it myself without having a professional show me step by step how to do it. Poke cakes are so simple to make and so very flexible in the choice of flavors. The chocolate ganache makes an ideal topping and a nice change-up from regular chocolate frosting. I like the idea of substituting chocolate pudding for the vanilla, though I think I might opt for something like a banana pudding for use in this. The thought of using a chocolate cake mix along with chocolate pudding topped with the chocolate ganache would really be a chocolate overload!

Well if your family has anything like a sweet tooth then this is a great recipe to bring enormous smiles to their faces! AND, besides the time it spends in the oven and refrigerator, it only takes about 10 minutes of your time to make which must make it the winning recipe of the century, lol! Our young son suggested we use chocolate pudding next time (instead of vanilla). One can never have too much chocolate now, can one?
