Simple Carrot Loaf Cake

Ingredients

  • 2 cups sugar
  • 3 cups flour
  • 1 teaspoon soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 2 cups coarsely grated carrots
  • 1 1/3 cup salad oil
  • 2 eggs beaten
  • 1 cup chopped nuts
  • 1 cup crushed pineapple, drained
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon extract
  • 1/2 teaspoon almond extract

Instructions

Combine dry ingredients in large mixing bowl. Add carrots, salad oil, and eggs. Beat until well mixed. Add other ingredients and stir. Put batter in two large or three small loaf pans which have been oiled and floured. Bake at 350 for 1 hour.
