Apple Coffee Cake

This moist apple coffee cake is made with fresh apples, cinnamon and a touch of sour cream. It's the perfect cake for afternoon snacking, brunch or parties.

  • 1 cup butter
  • 1 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 cup sour cream (light or yogurt)
  • 1/2 cup brown sugar
  • 1/3 cup nuts
  • 4 tablespoons white sugar
  • 1 teaspoon cinnamon
  • 2 apples, peeled and sliced


  1. Cream butter and sugar. Add eggs and vanilla. Add dry ingredients alternately with sour cream.
  2. Put half of batter in pan. Lay apple slices on batter and sprinkle 1/2 of topping over them. Add remaining batter and sprinkle topping on it.
  3. Bake in 350 degree F oven 35-40 minutes.

what is the topping made with?

Hello there! Thanks for your comments! As far as pan size, I would go with an 11x7 baking dish. For apple slices, I would keep them pretty thin, but not flimsy. Maybe 1 inch thick and its widest point. If there's a better way to go, definitely let us know.
