Crawfish Etouffee

Ingredients

  • 3/4 cup chopped onion
  • 3/4 cup chopped bell pepper
  • 1/4 cup margarine
  • 3 Tbsp flour
  • 1 cup water
  • 8 ounces can tomato sauce
  • Cajun Spice Seasoning of your choice, to your liking
  • 1 -2 lb crawfish tail meat
  • 2 cups cooked rice

Instructions

Cook onion and bell pepper in margarine in large skillet until tender. Stir in flour. Cook 1 minute, stirring constantly. Gradually add water and tomato sauce. Cook over medium heat, stirring constantly until mixture is thickened and bubbly. Add Cajun seasoning to your taste. Cover and cook on simmer for about 10 minutes then add crawfish and cook for additional 10-15 minutes. Stir as needed. Serve over cooked rice.
