Hobo's Favorite Potato Hash Skillet

  • 3 large potatoes, diced
  • 1/4 cup vegetable broth
  • 1 cup onion, chopped
  • 1 cup green pepper, chopped
  • 1 cup red pepper, chopped
  • 1 cup corn kernels
  • 1 teaspoon thyme
  • 1/2 teaspoon tarragon
  • salt and pepper, to taste
  • oil or margarine


  1. Parboil diced potatoes until tender, then drain.
  2. In a large skillet, combine broth, onion and peppers.  Cook over medium heat about 5 minutes.
  3. Add corn and cook for a few more minutes.
  4. Add vegetables to potatoes and toss with thyme, tarragon, salt and pepper.
  5. Wipe out skillet and heat oil or margarine. Add potato mixture to skillet and cook until potatoes being to turn golden.

I can eat potatoes any way you make them, and this recipe sounds so appetizing. I want to try it out really soon. I don't have tarragon, is there something else I could use instead? I am not sure what it tastes like even because it is not something I would normally use.
