Basic Blondies

Ingredients

  • 1/2 cup butter or margarine
  • 3/4 cup packed light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup plus 2 tablespoons all-purpose flour
  • 1 teaspoon baking powder
  • 3/4 cup chopped walnuts

Instructions

Serving Size : 16. Heat oven to 350 degrees. Line an 8" square baking pan with foil, letting ends extend above pan on 2 sides. Coat foil with nonstick spray. Melt butter in a medium saucepan. Stir in brown sugar and stir over medium heat 1 minute or until mixture bubbles. Remove from heat. Let cool 20 minutes or until lukewarm. Stir in egg and vanilla, then flour and baking powder until blended. Stir in nuts. Spread in prepared pan. Bake 20-22 minutes until a wooden pick inserted in center comes out clean. Cool in pan on a wire rack. Lift foil by ends onto cutting board. Cut into 16 squares. COCONUT MACADAMIA CHOCOLATE Prepare Basic Blondies through mixing, omitting walnuts. Stir in 1/4 cup each sweetened flake coconut, chopped macadamia nuts and coarsely chopped bittersweet or semisweet chocolate. Spread in pan and sprinkle with another 1/4 cup each coconut, chopped macadamia nuts and chocolate. Bake 24-26 minutes until a wooden pick inserted in center comes out clean. Cool and cut as directed. PEANUT LOVER'S Prepare Basic Blondies through mixing, omitting walnuts. Stir in 1/4 cup each chopped unsalted peanuts and peanut butter chips. Spread in pan. Cut 4 milk-chocolate-covered peanut butter cups into quarters. Distribute over top, then press gently until level with top of batter. Sprinkle with 2 tablespoons each chopped peanuts and peanut butter chips. Bake 23-25 minutes until a wooden pick inserted in center of batter (not peanut butter cups) comes out clean. Cool and cut as directed.
