These Veggie Egg Boats are incredibly easy and fun to make. Sometimes having eggs for dinner just sounds delicious, doesn't it? If that's the case for you, this is the perfect "breakfast for dinner" recipe. Each egg boat is like having an omelet in a bread bowl. You can also go the more traditional route and make this recipe for breakfast. It's also an excellent brunch menu item. No matter when you choose to bake these Personal Egg boats, they are sure to please everyone at the table.

These Veggie Egg Boats are great for any meal. If you are on a diet or just wanna have something light for a meal or snacks, then these stuffed bread rolls are the perfect to fill your tummy. You can vary the filling actually.

This sounds amazing for breakfast or any reason at all really...and I love that it's got veggies and French bread in it but since I'm trying to avoid carbs, I'm actually contemplating trying this recipe and instead of using the bread as the vessel for the eggs, baking the egg mixture into some portabella mushroom caps. Can you imagine how much flavor it'll add to the eggs? Yum!

this is awesome! i am definitely sending this to my roommate so we can make this this weekend!!

I will be making this recipe this weekend. We are going to the market tomorrow an I only need to buy the bread, some mushrooms, which I will cook with the green pepper and some onions. I am going to prepare this Friday night and just pop it into the oven Saturday morning.

I made these Veggie Egg Boats for breakfast last weekend and we all loved them. We had just one bell pepper so added a few chopped mushrooms and some crumbled feta. The younger children thought they were great fun and asked me to make them again soon which I will be very happy to do as they are quick and easy and tasty too.

These look absolutely delicious! Wow. I love the creative use of french rolls.
