Two (2) cups zucchini is approximately two (2) 5" - 6" zucchinis. If you have left over grated zucchini, just freeze it in a Ziploc bag or airtight container.

You can also use frozen zucchini, just make sure it's defrosted and any excess liquid is drained before adding it to the recipe.

Lightly tapping the tin on a flat surface will settle the muffin batter, so they cook more evenly.

These muffins look scrumptious. I am also liking zucchini in all these different recipes. Zucchini seems to be the trend at the moment. It is really healthy and adding zucchini to something like these muffins makes you feel less guilty for eating the muffins. Does that mean we can have two?

I love zucchini recipes! I bet you can't go wrong when you add chocolate chips. I know these will be great, but my son will complain when he sees the green pieces of zucchini! I love zucchini bread way more than pumpkin bread.
