This recipe brings back memories of going to IHOP when I was a little kid with my parents and ordering banana pancakes. Why that particular memory sticks in my mind decades later is a mystery, but I do remember the pancakes being quite good. This is, of course, quite a different recipe, but it does remind me of my first banana pancake experience. I think I might add some walnuts to the batter, but otherwise it's quite good.

It is a public holiday here in South Africa today. Of course I am awake at the usual time because my body clock is used to it! I am looking for a nice treat today and to take it easy and these pancakes look like the perfect start. I will definitely make the gluten free ones as I typically have GF flour on hand. I find rice flour to be really expensive but you can buy lots of different kinds of GF flour and I buy a regular GF mix off the shelf so don't be put off if you think it may be too expensive. Other GF options are out there at a much cheaper price. Found in the health food isle, not with the regular flour in the baking section. If I would imagine, if price wasn't an issue, that almond flour would make these pancakes scrumptious because the nutty flavor would go well with the banana.

We had these as a breakfast treat today. It was a very fresh and particularly yummy start to the day with the banana flavored pancakes topped with marscapone and then a sprinkling of blue berries fresh from the garden. Quick and easy to make too which is always an enormous plus with me. Lol!
