This apple cake recipe is undeniably easy to recreate and even more undeniably delicious to eat. Ingredients

  • For the Cake
  • 3 large apples, skin one
  • 1 tablespoon lime juice
  • 1 3/4 cup white sugar
  • 1/2 cup butter at room temperature
  • 1 package cream cheese at room temperature (8 oz.)
  • 2 large eggs at room temperature
  • 1 tablespoon vanilla extract
  • 1 1/2 cup all purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • For Topping
  • 1/3 cup light brown sugar
  • 3 teaspoons cinnamon
  • 1/2 cup chopped pecans

Recipe

  1. Preheat oven to 350 degrees. Place baking rack in the middle of the oven. Grease a 13x9 inch baking pan with shortening.

  2. Peel, core and chop 3 large firm crisp apples. Toss them in 1 Tablespoon of lemon juice, set aside.

  3. In a large bowl, using an electric mixer beat the 1 ¾ cup of white sugar, butter, the cream cheese and vanilla until smooth. Add the eggs and beat until well combined and creamy.

  4. Combine the flour, salt and baking powder in a small bowl. Stir to combine. Add the flour mixture to the creamed mixture, beat with an electric mixer until just combined. Add the chopped apples and fold them into the batter.

  5. Pour the apple batter into the prepared 13x9 inch baking pan. Leveling the batter out as needed.

  6. In a small bowl combine the light brown sugar, cinnamon and chopped pecans. Sprinkle over the apple batter in a pan.

  7. Bake at 350 degrees for 50-60 minutes or until the cake tests done with a toothpick.

Apples and cream cheese...you can count me in! I just love apples in everything and I've learned that they help in keeping whatever you bake them into moist. This is kinda like an apple cheesecake extravaganza but I agree with you Edmund, I'd rather use walnuts instead of pecans...they seem to go much better with the apples I think.

ingredient list says lime juice but actual recipe says to toss with lemon juice... which??

I love apple cakes and this looks like a wonderful variation. I'm a little puzzled by the directions, though. The directions call for the apples to be peeled, though the video clearly shows the apples with the peels left on. I normally peel apples when I make an apple cake, but I'd like to try it with the unpeeled apples and see how it tastes. I'd also use walnuts rather than the pecans suggested in the video.

I don't think it's strange to eat cake for breakfast. Many countries in Europe start off their day with sweet things for breakfast. I love the sound of this apple cake. It must be so good with the cream cheese. I would love to make this. What I especially like is the 'surprise' sugar, cinnamon and pecan nuts on the top.
