If you've been craving that perfect breakfast recipe that also doubles as a sweet, anytime snack, this Blueberry Muffin Loaf is the bread recipe of your dreams! Fluffy blueberries burst throughout this moist loaf of bread, making this one of the most craveable recipes around. The reason we call this recipe a muffin loaf is that it has the same texture and consistency as a muffin, except we make it in a loaf tin. Seems pretty straight forward when you say it, but to eat it is a whole separate experience. This is truly one of the best recipes to wake up to, but you can choose to enjoy it anytime you want.

Easy

Ingredients

  • 1 cup white sugar
  • 1/2 cup salted butter
  • 2 eggs
  • 1 tablespoon vanilla extract
  • 1 cup milk
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 2 cups blueberries
  • 1 teaspoon cinnamon

Instructions

  1. Preheat your oven to 350 degrees F.

  2. Grease a 9-inch loaf pan.
     

  3. Cream together the butter and sugar with an electric mixer.

  4. Add in the eggs, vanilla, and milk. Beat together well.

  5. Add the dry ingredients and beat until well combined

  6. Add blueberries and mix by hand gently with a spatula being careful not to crush the berries.

  7. Pour batter into your loaf pan and bake for 60-75 minutes or until a toothpick comes out clean.
     

  8. Allow bread to cool in the pan for 10 minutes before removing to finish cooling.

Oh my goodness, this muffin loaf looks so amazing and is definitely going on my I need this in my life to do list! This is one of those recipes you can probably make several of and freeze for another day, but then again the aroma I'm sure is so yummy throughout your home when it's baking it'll be worth making it fresh every time. I'd probably toss in some grated lemon peel though since it goes so nicely with blueberries.

I will never be able to find any fresh blueberries at this time of the year. That will not stop me from making this though. I know I can find frozen in my local grocery store and I think that they will work just a well. This would make a great breakfast along with my morning cup of joe.

In our empty nest, this recipe would give us breakfast for a few days. As a retired couple, we are no longer at the mercy of the clock but I don't always like to cook. Because we both have a little bit of a sweet tooth I can not wait to make this and enjoy it with a cup of coffee. Thanks for the free and simple recipe.

My little niece loves Blueberries, so she truly enjoys it when I make her this Blueberry Muffin Loaf. It is packed with blueberries and flavor. I love how easy it is to make and the video helped me a lot in the beginning. I make this so often for my little girl I think I could do it with my eyes closed.

The picture looks so tempting that this will be the next thing I bake. We have only recently started baking, I mean without using a box of cake mix, etc, and am beginning to enjoy it. This looks like a recipe that we can handle without finding it too difficult. And I look forward to eating it too.

This bread was really good. I liked that it wasn't overly sweet, so I didn't feel bad about eating it for a morning snack! I would definitely make this again.
