Mock Sourdough

Ingredients

  • 1 1/2 tsp yeast
  • 2 cups bread flour
  • 1 tablespoon sugar
  • 1/8 tsp baking soda
  • 1/2 cup sour cream
  • 1 tablespoon vinegar
  • 1/2 cup milk

Instructions

All ingredients should be at room temperature before starting. Add the ingredients to the pan in the order listed. Select "White Bread". Press "Start".

Sandi, I'm happy to hear that someone else is still using a bread machine. I thought most people sold theirs at garage sales! I feel the way you do about the ingredients. When I make bread, I put the liquids in first, the bread flour second to last and the yeast last. I looked up a traditional sourdough bread machine recipe and it calls for a "sourdough starter" of water, sugar, flour, and yeast. After the starter is added, then the recipe calls for water, salt, sugar, bread flour, and yeast. This must be a simplified version. I'll give it a try!

I just received a beautiful, new Cuisinart bread machine and my daughter was asking if I could make sour dough bread in it so I'm thrilled to come across this recipe! I'm wondering though about how the ingredients go into the pan. Usually the wet ingredients go in first which is opposite of this recipe listing. Has anyone made this and is the order of ingredients correct?

I've wondered about this myself and a little internet research showed me that using a bread machine for sourdough wasn't ideal because the native yeast in sourdough doesn't ferment as quickly as normal bread yeast in the time allotted by the machine. Perhaps adding a wee bit of bread yeast would give it the boost it needs? I'd love to hear your results if you try it.
