Ham & Cheese Stuffed Meat Loaf

Jam packed with ham and cheese, this hearty dish can feed the hungriest of families. Cooked in vegetable juice to keep the meat moist and lock in all of the flavor, every bite gets better and better.

Ingredients

  • 2 pounds ground beef or meat loaf mix (ground beef, pork and veal)
  • 2 eggs, beaten
  • 1/2 cup Italian-seasoned dry bread crumbs
  • 1 cup V8 vegetable juice
  • 1 teaspoon dried oregano leaves, crushed
  • 1/4 teaspoon freshly ground black pepper
  • 2 small onions, minced (about 1/2 cup)
  • 8 thin slices deli boiled ham
  • 2 cups Mozzarella cheese, shredded
  • ketchup, to taste

Instructions

  1. Preheat oven to 350 degrees F.
     
  2. Thoroughly mix the beef, eggs, bread crumbs, vegetable juice, oregano, black pepper and onions in a medium bowl.
     
  3. Line a rimmed baking sheet with aluminum foil with 2 inches of foil extending beyond the ends of the baking sheet.
     
  4. Press the beef mixture into the baking sheet. Arrange the ham slices on the beef mixture and sprinkle with the cheese. Lift up one end of the foil and roll the beef mixture up like a jelly roll.
     
  5. Remove the foil and place the meat loaf onto the baking sheet. Press the seams to seal. Spread ketchup over the meat loaf, if desired.
     
  6. Bake for 1 hour or until the meat loaf is cooked through. Let the meat loaf stand for 10 minutes before slicing.

Ham in a meatloaf? Now, I have heard it all. I love chicken cordon blue, but I am not sure how I feel about ham in my meatloaf. Is this like a bacon wrapped meatloaf? Does the ham give the meatloaf a smoked flavor? I will use the sausage and the ground beef, but I don't use veal.
