I love to eat meatloaf, and so does my family. It is always interesting to discover new recipes for this comfort food, and try them. All that is needed to complete the meal are mashed potatoes and a tossed salad. For this recipe, I would use lean ground beef or ground turkey.

This is a nice straightforward meatloaf recipe. It brings back memories of the type of meatloaf that my mother used to make, which was also great the next day when it was used in sandwiches. Because it's so simple, it's quite open to variations and additions. I've often added some bacon to the meatloaf mixture as well as adding some chopped jalapenos to it. It's a nice basic recipe and I'm happy to come across this.
