Caribbean Bars

Ingredients

  • 1/2 cup butter
  • 1/4 cup sugar
  • 1 1/4 cup flour
  • 2 eggs
  • 1 cup brown sugar, packed
  • 1/2 cup crushed pineapple, drained, (save juice for icing)
  • 1 cup coconut
  • 1/3 cup candied cherries, chopped
  • 1 teaspoon rum flavoring
  • 2 tablespoons flour
  • 1/2 teaspoon baking powder
  • 1 1/2 cup icing sugar
  • 3 tablespoons butter
  • 1/2 teaspoon rum flavoring
  • 5 teaspoons pineapple juice

Instructions

Crumble butter, sugar and flour together well. Pack into a 9 x 9 ungreased pan. Bake in 350F oven for 15 minutes. Beat eggs slightly. Stir in remaining ingredients through baking powder. Spread over bottom layer. Bake in 350F oven for 25 to 30 minutes until a medium brown colour and is set. Frost with icing. Cut into squares. Combine sugar, butter, flavoring and juice together in a bowl. Beat, adding more juice if icing is too stiff. Spread over bars. Allow to set before cutting. Note: I do not like the rum flavouring, so I substitute vanilla in the top layer and the icing.
