Khanom Mo Kaeng (thai Taro coconut egg Custard)

Ingredients

  • 1/2 cup taro root or cooked pea beans, well mashed
  • 3 eggs
  • 1 1/2 cup coconut milk
  • 1/4 tsp salt
  • 1/3 cup sugar

Instructions

Beat all ingredients together well and strain into a greased dish or individual custard cups. Place in pan of hot water and bake in 300 oven for 45 minutes to 1 hour, or until set.

Cooked pea beans, as in green peas from the pod? This is such an interesting recipe...just looking at the ingredients gives me an appreciation for the many talented chefs in the world who come up with wonderful recipes like this. I love custard so much but never used taro root before so, the beans seem to be the easier option for me...I have to admit though, I am kinda curious about what it actually is so I may have to look further into it.
