Ingredients

  • 1 cup Panko crumbs
  • 1 cup grated Parmesan cheese
  • 1 teaspoon Herbs de Provence
  • 1 cup flour
  • 2 eggs beaten
  • 2 zucchinis, thinly sliced to about 1/4 inch thick
  • 1 cup vegetable oil or canola oil
  • 3 cups mayonnaise
  • 1 teaspoon lime juice
  • 1 teaspoon lime zest
  • 2 cloves garlic, minced
  • A few pinches of salt and pepper

Instructions:

  1. In a medium bowl combine the panko, Parmesan and herbs de Provence.

  2. In another medium bowl place the flour. Place the eggs in another medium bowl and beat with a whisk or folk.

  3. Heat the vegetable oil in a large skillet over medium high heat.

  4. Dip the zucchini rounds a few at a time in the flour, then the eggs and finally in the panko cheese mixture pressing gently to coat.

  5. Fry the zucchini until crispy in the hot oil for 30-60 seconds on each side. Place on a paper towel lined baking sheet.

  6. Continue until all of the zucchini rounds are fried.

  7. For the lime aioli mix together the mayonnaise, lime juice and zest, garlic and salt and pepper in a small bowl.

  8. Serve the lime aioli with the fried zucchini.

I love anything zucchini. This would be ideal for snacking on, while watching a movie, or surfing the web

I have made this recipe many times during the months when fresh zucchini is available. I LOVE zucchini and prepare it several different ways but I have to say that this is my favorite way to prepare and enjoy fresh zucchini. Thank you for a chance to win something that would make the preparation easier.

This recipe isn't one for me because I don't like zucchini, sorry!

These sound awesome!

These zucchini bites look absolutely scrumptious. I especially like the sound of the aioli. Yummy. I think it will be a nicer taste to add lime juice instead of lemon. I can't wait to make these. I like the way the panko crumbs are mixed with the grated cheese. I am sure these are going to taste great!

Sausage balls

I have several, but my favorite is bacon wrapped whole water chestnuts. This recipe is so simple and everyone seems to like it. I mix three ingredients bacon wrapped chestnuts and soy sauce, and place under the broiler for fifteen or twenty minutes. It turns out well every time and there are no leftovers.

We used to fry zucchini slices every summer when gardens overwhelmed our friends who grew the stuff. We dipped it in egg, then corn meal. Sometimes we sprinkled on some herbs, but with that many slices to cook for that many people, it had to be fast, so usually plain. Still a good memory. I have to leave frying food for healthier people now.
