Roasted Tomato Pesto Crackers

Scrumptious appetizers before a dinner are sometimes the icing on the cake. Warm up your appetite with Roasted Tomato Pesto Crackers. Pop them in your mouth and eat up one of the best appetizer recipes.


  • 4 juicy tomatoes
  • pesto, to coat crackers
  • 8 cracker breads
  • olives (optional)
  • olive oil
  • freshly ground black pepper, to taste
  • sea salt, to taste


  1. Preheat oven to 425 degrees F.
  2. Quarter tomatoes, place on baking tray, sprinkle with salt, pepper, olive oil and bake in oven for 15-20 minutes.
  3. For last 10 mins, add cracker breads on lower tray to make more crispy.
  4. Remove cracker breads, coat with pesto, add tomatoes, top with an olive and there you are!
