Mushrooms with Garlic (setas Con Ajo)


  • 1/4 cup olive oil
  • 4 cloves garlic, mashed
  • 1 1/2 tablespoon flour
  • 1 cup chicken broth
  • 1/2 teaspoon crushed red pepper
  • 3 tablespoons chopped fresh cilantro
  • salt
  • 1/2 pound mushrooms, stems removed
  • 3 tablespoons chopped parsley for garnish


serves: 4 as appetizer (tapas). Heat 2 tablespoons of the the olive oil in a large skillet and saute the garlic for about 2 minutes. Add the flour and mix well. Add the broth, crushed pepper, cilantro and salt. Cook over medium heat for about 10 minutes, uncovered. Meanwhile in a separate large skillet saute the mushrooms in the rest of the olive oil until lightly colored. Transfer the mushrooms to the sauce, mix well, cover and cook over low heat for about 10 minutes. Transfer the mixture to a deep serving platter and sprinkle with the chopped parsley.
