This is like a refined, grown up version of a fried mozzarella stick! When friends come over to visit in the evenings, I like to serve wine and cheese, so I can't wait to surprise them with this! The roasted pepper romesco sauce is out of this world, and I might even try it tossed with pasta, as a topping for a sandwich or wrap, or even as a salad dressing!
