Mchicha Na Nazi (tanzania)

Ingredients

  • 1 large bunch fresh spinach (silver beet) or 500 g (1 lb) frozen spinach
  • (silver beet) thawed
  • 250 milliliters (8 fl oz) coconut milk
  • 60 grams (2 oz) ghee (Indian cooking butter) or butter
  • 1 onion, diced
  • 1 tomato, diced
  • 5 grams (1 teaspoon) curry powder

Instructions

(SPINACH WITH COCONUT). Remove the stalks and wash the fresh spinach (silver beet) thoroughly. Cook the fresh spinach (silver beet) in the coconut milk for about 5 minutes and drain well. Save the coconut milk. In a saucepan, heat the ghee or butter and fry the onion, tomato and curry powder for about 5 minutes. Add the cooked spinach (silver beet) or the frozen spinach (thawed and drained) and the coconut milk. Stir all ingredients well and cook for a further 15 minutes over low heat. Serve hot with rice and fried fish dishes. Serves 4.

I love this dish for my rices or pasta and when i feel like having a vegeterian meal. 15 minutes seems too much for cooking the spinach because its very soft and you start by boiling it in coconut milk for five minutes. the curry powder and coconut milk give it that indian curry vibe.
