Taco Bake Casserole

Ingredients

  • 2 Tbsp. oil
  • 3/4 cup crumbled veggie burger
  • 3 green onions, sliced
  • 1 can stewed Mexican-style tomatoes
  • 8 oz. package Velveeta cheese
  • 10 oz. restaurant-style tortilla chips
  • 1/2 cup sour cream

Instructions

In oil, saute the green onions and add the vegie burger. Fry until brown. Turn off heat and stir in the tomatoes. Drain them first if there is more than 1/4 cup of juice. Let mixture cool. Cut the Velveeta into 1" cubes. Stir cheese cubes into cooled tomato mixture. In a deep 2 qt. casserole dish, put a layer of half the chips and spoon over half the tomato/cheese mixture. Repeat. Bake the casserole in a hot (400 degree) oven until bubbly, about 15 minutes. Dollop on the sour cream and serve.
