Soybean Sandwich Spread

Ingredients

  • 1 1/2 c cooked, mashed soybeans
  • 1/2 c sunflower seeds
  • 1/2 c pureed tomatoes or tomato sauce
  • 1/2 medium onion, finely chopped
  • 1 1/2 T pickle relish
  • 2 T ketchup
  • 1/2 c wheat germ
  • 1 t salt
  • 1/8 t pepper
  • 1/4 t thyme
  • 1/4 c finely chopped celery (optional)

Instructions

Makes 3 cups. Combine all ingredients in large mixing bowl. Mix well. Will keep in refrigerator several days. When ready to make sandwiches, add a little mayonnaise to desired consistency and spread a thick layer on whole wheat bread.
