Pinto Bean Burgers

Ingredients

  • 1/2 cup minced green onions
  • 1 1/2 tablespoon minced garlic
  • 2 tablespoon white wine or vegetable stock
  • 29 ounce can cooked drained pinto beans
  • 3/4 cup cracker meal
  • 2 egg whites
  • 1/2 cup chopped fresh parsley
  • 2 tablespoon seasoned rice vinegar
  • 1/2 teaspoon Spike seasoning powder

Instructions

Yield: 6 - 5" burgers.

  1. Preheat the oven to 350 degrees F. In a small non-stick saute pan, braise the onions and garlic in the white wine until soft.
     
  2. In a medium bowl, combine the sauteed onions and garlic, beans, cracker meal, egg whites, parsley, vinegar, and seasoning powder.
     
  3. Mash well with a fork or potato masher until blended but not entirely smooth. On a parchment-lined non-stick baking sheet, drop the mixture by 1/2 c. (I use 1/3 c.) amounts and flatten gently with a spoon to form six 5" "burgers".
     
  4. Bake for 25 minutes, or until set and beginning to brown lightly. Serve hot.
