"Oh Lasagna…you are so cruel…A moment on the hips, and a lifetime on the hips. We are gonna be changing stuff around here! This recipe for Mediterranean Roasted Vegetable Lasagna with Vegan Bechamel Sauce taste so sinful, but it really isn’t…okay maybe a little. It has deep flavors of each and every vegetable, and a super creamy melt in your mouth bechamel sauce. It may seem like a lot of steps or a lot of work, but trust me…it is not! I am a super lazy cook, and would not make it otherwise. Feel free to use any vegetables that you would like in place of the ones I have. Even if you wanna add eggplant, you can. Just don’t tell me…we all know how I feel about that vegetable!"
