Low fat Vegetable Loaf

Ingredients

  • 1 cup chopped tomatoes
  • 1 cup baby peas
  • 3 tablespoon minced onion
  • 1/2 cup lite evaporated milk
  • 1/8 teaspoon minced garlic
  • 1 cup cooked diced carrots
  • 1/2 cup diced celery
  • 1 cup soft bread crumbs
  • 4 egg whites, beaten
  • 1/8 teaspoon pepper

Instructions

Preheat oven to 350: F. In large bowl, combine all ingredients, mix well. Turn onto work station and form into loaf. Place loaf in nonstick loaf pan. Bake for 1 hour. Serve hot. Makes 8 servings.
