Almonnaise

Mayonnaise is tasty, but can be full of calories. Almonnaise is a vegan, lower calorie alternative. This free vegan recipe is ideal for any vegan ingredient substitution list. Free vegan recipes rarely taste this good. Hooray for frugal vegan recipes.

Ingredients

  • 1/2 cup blanched almonds
  • 1/2 cup water or soy milk
  • 1 small sliver garlic
  • 1/2 teaspoon salt
  • 1/2 teaspoon seasoned salt
  • 3 tablespoon lemon juice
  • 1 dash cayenne pepper
  • 3 cup safflower oil

Instructions

  1. Blend almonds and water until thick and creamy.
     
  2. Add garlic, salt, lemon juice and pepper. Blend briefly.
     
  3. With blender on high, drizzle oil in. When the oil stops combining, and collects on top, stop blending.
     
  4. Remove lid and continue to add oil while beating shallowly.
     
  5. Final consistency will be between mayonnaise and whipped cream cheese.
     
  6. Enrich Almonnaise with nutritional yeast and garlic powder if desired.
