Wilted Lettuce In Vinegar Dressing

"This classic wilted lettuce summer salad recipe is served with a tangy hot bacon dressing. A perfect side dish idea to a great wine pairing dinner. You can add chopped shallots to add additional tangy but crisp flavor. Our suggestion is to use white wine vinegar. But, you may use apple cider vinegar instead. Adding some lemon juice or grapefruit juice will add a cool citrusy flavor. A teaspoon of chili flakes will also add a great deal to the wilted lettuce salad. "

Ingredients

  • 4 pound lettuce
  • 6 slice bacon
  • 2 teaspoon sugar
  • 1 cup vinegar

Instructions

  1. Fry the bacon until crisp.

  2. Dice the bacon.

  3. Wilt the lettuce in 4 tablespoons of bacon fat.

  4. Cut greens into bite-sized pieces with kitchen scissors.

  5. Add remaining ingredients and stir until incorporated.

  6. Top with bacon.
