Sweet Potatoes & Pecans

Ingredients

  • 6 pound sweet potatoes or yams
  • 1/2 cup butter cut in pieces, room temp
  • 2 tablespoon brown sugar, or to taste
  • 2 teaspoon grated orange and lemon zest
  • 2 eggs beaten
  • 1 3/4 cup coarsely chopped pecans

Instructions

Preheat oven to 350. Pierce yams with a fork and place on baking sheet. Roast until tender about 1-1/4 hours.Let cool slightly, peel and place pulp in a bowl. Mash, stir in butter,sugar and zests Mix eggs into the yams, transfer to a 3qt baking dish. Sprinkle on the pecans. Bake until heated thru about 1 hour.
