Stuffed Baked Peppers

These stuffed, colorful peppers are the perfect combo of salty and sweet. Coming from Bridgett at The Happy Little Tomato is this fantastic stuffed pepper recipe. Packed with Mozzarella cheese and covered in marinara sauce, they are great.

Ingredients

  • 2 pound mini sweet peppers
  • 1 pound ball of skim Mozzarella cheese
  • 2 cup marinara sauce
  • extra virgin olive oil, to taste
  • sea salt, to taste

Instructions

  1. Preheat the oven to 400 degrees F.

  2. Cut the tops off of your sweet peppers. Rinse them all and remove the seeds from the inside of the peppers.

  3. Cut your block of mozzarella into small chunk sizes. Small enough to stuff inside of your peppers, but not too small.

  4. Stuff all your peppers with the mozzarella.

  5. Line a deep casserole dish with 2 cups of your favorite marinara sauce. Then arrange the peppers on top of the sauce in a circular pattern.

  6. Drizzle the top of the peppers with extra virgin olive oil and then sprinkle the tops with a moderate amount of sea salt.

  7. Transfer the dish to your preheated oven and then bake at 400 for about 30 minutes or until the cheese looks bubbly and melted.

  8. Once the cheese looks melted change the oven to Broil and to 500 degrees. Broil at 500 for about 2-3 minutes until there is a nice subtle charred appearance to the peppers.

  9. Remove the casserole dish from the oven. Allow to cool for a few minutes and then serve warm.
