Poor Man's Baked Taters

Budget recipes never tasted so good and you really can't go wrong with potato recipes, especially if it includes cheese. So make the family happy with a dinner that includes these Poor Man's Baked Taters.

Ingredients

  • 4 medium even potatoes
  • 1 salt
  • 3 tablespoon melted butter
  • 2 teaspoon dried chives or dill (you could use 1 tablespoon fresh herbs instead)
  • 1 1/2 teaspoon caraway seeds or cumin
  • 4 tablespoon grated Cheddar cheese
  • 1 1/2 tablespoon Parmesan cheese

Instructions

  1. Preheat oven to 425 degrees F.
     
  2. Peel potatoes if the skin is tough, otherwise just scrub and rinse. Cut potatoes into thin slices but not all the way through.
     
  3. Use a handle of a spoon to prevent the knife from cutting all the way. Put potatoes in a baking dish. Fan them slightly.
     
  4. Sprinkle with sale and drizzle with butter. Sprinkle with herbs. Bake for about 50 minutes.
     
  5. Remove from oven. Sprinkle with cheeses. Bake potatoes for another 10 to 15 minutes until lightly browned, cheeses are melted and potatoes are soft inside. Check with a fork.
