Peruvian Sweet Potatoes

Ingredients

  • 6 sweet potatoes, baked in their skins
  • 4 ounce cream cheese
  • 1 egg yolk
  • 1 tsp chili powder
  • 3 scallions, chopped
  • salt and freshly ground black pepper to taste
  • butter

Instructions

Mash the flesh from the sweet potatoes, reserving the skins. Add the remaining ingredients except the butter and stuff back into the skins. Dot with butter, sprinkle with extra chili powder, and quickly brown on a hot grill, or under a broiler. Serves 6. Note: These baked potatoes are excellent with pork chops or spareribs, turkey, or chicken. A green vegetable would be a good accompaniment.
